Most of the potatoes exported from India are grown in states such as Uttar Pradesh, Bihar, and Gujarat. Among the countries importing potatoes from India, Nepal is the largest importer.

Kufri Pukhraj — The Kufri Pukhraj variety consists of medium to large-sized potatoes with a slightly lumpy shape. These potatoes are light brown to golden in color and have smooth skin with a wax-like texture. The skin often has a few shallow eyes and small brown spots. After cooking, Kufri Pukhraj potatoes develop a tender texture and a mild, earthy flavor.
Kufri Jyoti — Kufri Jyoti is a popular potato variety known for its easy cooking and waxy texture. It has a mild flavor and is particularly suitable for making instant flakes and chips. The flesh of this variety may be white or match the skin color.
Kufri Bahar — Kufri Bahar potatoes are large, round-oval in shape, and white in color. The skin is smooth, with medium-deep eyes and white flesh. This variety is adaptable to regions like Haryana, Himachal Pradesh, Jammu and Kashmir, and Uttar Pradesh.
Bhura Aloo — Bhura Aloo is an important potato variety mainly found in Bihar. It is a native variety with generally low productivity, but its red skin makes it popular among farmers, maintaining high demand.
Kufri Chipsona — Kufri Chipsona potatoes are easy to cook, mild in flavor, and have a waxy texture. This variety resists discoloration even after cooking and contains low levels of reducing sugars and phenols, making it ideal for chips and French fries preparation.
Kufri Sindhuri — Kufri Sindhuri is a medium-late maturing variety that takes approximately 110-120 days to mature. Its tubers are medium-sized, smooth, round, with light red skin and dull white flesh.
Kufri Chandramukhi — Kufri Chandramukhi is an early-maturing variety that matures in around 80-90 days. The tubers are white, large, smooth, oval, and flattened with white skin, fleet eyes, and white flesh. This variety yields around 100 quintals per acre.
Kufri Khyati — Kufri Khyati is a high-yielding potato variety with moderate resistance to late blight. It is cultivated in the plains of India and generally yields more than other early maturing cultivars.
